Because these cookies are SO-O-O good, this recipe has been doubled. If you need to make less, simply cut the recipe in half.

Ingredients:
2 cups softened butter (or oleo - butter is better)
2 cups white granulated sugar
2 cups brown sugar - packed
4 large eggs
2 teaspoons vanilla extract
2 teaspoons salt
3 cups flour
2 teaspoons baking powder
6 cups instant oats

Directions:
Cream together: Butter, sugars, eggs and vanilla extract
Mix together: Flour, salt, soda, and oats

Add dry ingredients to creamed mixture. Dough will be very thick. Mix with your hands. If you want chocolate chips, nuts, etc., add them at this point and then mix the dough thoroughly again. The top favorite is chocolate chips and chopped pecans. Measurements are in the Variations section.

Grease cookie sheets first time only. Put balls of dough on the cookie sheet and press them flat. Balls should be no bigger than about 1 1/2" across. Leave room for them to spread a bit.

Bake in a preheated 350 degree oven for 8-10 minutes. While the cookies are baking, lay out a double strip of foil on your countertop. When the cookies are done, gently lift them off the cookie sheet and place them on the foil for cooling. Put the second sheet of cookies in the oven. Repeat process until all cookies are baked. Don't stack the cookies until completely cooled.

2 small packages of butterscotch or chocolate chips
2 cups raisins
2 cups dates
2 cups chopped pecans (or nuts of your choice)
