Cake Doughnuts

Ingredients:
2 cups white flour
1/2 cup granulated sugar
1 teaspoon salt
3 teaspoons baking powder
1/4 teaspoon cinnamon
dash of grated nutmeg
2 tablespoons melted butter
1/2 cup milk
1 whole egg, beaten
vegetable oil

Directions:
Sift dry ingredients together, then add melted butter. Add milk to the beaten egg, then pour into the first mixture.

Knead the mixture lightly, then roll or pat it out on a well-floured board or pastry sheet. Roll to 1/4 inch thick. Cut out doughnuts with a doughnut cutter.

Fry doughnuts in 3-4 inches of vegetable oil which has been preheated to around 360 degrees F. Cook only a few at a time, turning often until they are evenly browned on both sides.

Drain on a rack over a cookie sheet or on paper toweling.

Coatings for Doughnuts:
Apply to cooled doughnuts.

Cinnamon and granulated sugar mixed together: Put the mixture into a bowl. Then roll the doughnuts in it until well coated. Or put the mixture into a paper bag, add a few doughnuts, close the bag, and shake well.
Plain powered sugar: Coat the same way as for cinnamon and sugar.
Frosting: Use any recipe. Frost tops only or use a thinner frosting and dip doughnuts for an overall coating. Chocolate is always a hit. So is plain cream, caramel and mocha.
